Potato Salad

I saw this recipe in the paper the other day and decided I would try it out.  The lady submitting the recipe said this:  "My sister-in-law has always been an amazing cook.  When we gathered for family parties, everyone eagerly watched to see what kind of culinary delight she would bring.  Several years ago my anticipation quickly turned to disenchantment when she showed up to our Memorial Day cookout with a bowl of potato salad, a dish so normal I counted on disappointment.  But since I did not want to offend her, I sampled a small plate.  By the end of the night I had forgone dessert in favor of my fifth helping of the salad.  Before she left, I begged for the leftovers."  I was skeptical when I made it because it was so stupidly simple, how could it be good?  Try it, you'll like it!
                                         OLIVIA'S POTATO SALAD
Serves:  4-6
Prep time:  30 minutes
3-1/2 pounds red potatoes
1 packet ranch dressing mix
1/2 large red onion
4 ounces bacon pieces
1/2 to 3/4 tsp seasoning salt
3/4 to l cup mayonnaise

Cube potatoes and boil until fork-tender.  (Don't over-cook)  Submerge in cold water until cool.  Drain.  Mince onion and mix with cooled potatoes, ranch drssing mix and bacon pieces.  Add mayonnaise a little at a time until salad has reached desired consistency.  Add seasoning salt to your liking.  (For those who have their own chickens, it might even be good with a few eggs added)

Dere and Sona

Here's some of Derek and Sona's engagement pictures.  She is such a sweetheart and it was so much fun to take pictures of them.  I can't wait for you all to meet her and make her welcome in our family.

Birthday cake for big sis

In January, Kristin and Rachel made a cake and gave it to Amanda's piano student for her birthday.  As you can tell from the picture, she was thrilled.  The cake was such a success that the mom asked Kristin and Rachel to do another cake for a real princess.  See next post.

The Princess and her cake

Kristin and Rachel continue to refine their cake decorating skills.  This time, they made a Princess cake for Eliana.  Eliana's wish was to have a princess birthday cake that was purple and pink.  Based on the picture, you can tell she got her wish.  Eliana and her mom came over last night to help finish decorating the cake.  In case you are interested, the cake and the pillow are chocolate, another wish from the birthday girl.
