Dueling Rhubarb Strawberry Crunch

This is what I like to make when I have rhubarb. I have to buy mine here. I tried planting one but it never produced much then eventually died. Funny story about buying rhubarb. I went into my regular store one time to buy some rhubarb. I had seen it there before but didn't see any this time. I asked the guy stocking the produce section if they had any. He said scratching his head, "rhubarb, rhubarb". I could tell he had no idea what I was talking about. I told him it kind of looks like "red celery". He walked over to where it should be and started inspecting the shelves. "Nope! No red celery here." And that was all the answer I got. . .

I did make S/R Pie for dinner Friday night because we had guests and I think that's my favorite kind of pie.

Rhubarb Strawberry Crunch

3 cups diced rhubarb* 1 cup packed brown sugar
1 cup sliced fresh strawberries 1 1/2 cups flour
1 cup white sugar 1 cup butter
3 Tbs flour 1 cup rolled oats

Mix together 1 cup white sugar and 3 Tbs flour. Mix in the strawberries and rhubarb until well mixed.
Mix together brown sugar, 1 1/2 cups flour, butter and oats until crumbly. You may want to use a pastry blender for this. Crumble on top or rhubarb/strawberry mixture.
Bake in a preheated 375 degree oven for 45 minutes.

*It's been awhile since I made this but I am pretty sure I have used 2 cups rhubarb and 2 cups strawberries.
Note: the "crisp" to fruit ratio is probably 3:1. It's a very crisp-heavy dessert and I like it!

The Quest Continues: Rhubarb Crumble

I've been on a continuous journey to find a rhubarb recipe that Tamsyn will not only eat, but like. Every Spring when the rhubarb arrives in abundance, I try at least two or three new dishes. So far, the quest has not been successful, but we've eaten some pretty yummy things along the way. Take this latest one for example: delicious! I thought so anyway. Try for yourself and see if you don't agree.

Rhubarb Crumble
(From Simply Recipes by way of Oprah)
Filling
2 lbs rhubarb, cut into 1-inch pieces (6 cups)
1-1/4 cups sugar
1/4 cup flour
1 tsp vanilla
1/4 tsp ground cardamon

Crumble Topping
1 cup flour
1/2 tsp salt
1 cup light brown sugar
1/2 cup butter, cut into cubes
1. Preheat oven to 375. In med bowl, mix together the filling ingredients. Spoon into a 9 X 13-inch baking dish.
2. Mix together the flour, salt and brown sugar. Cut in the butter until pieces are pea-sized. Spread topping over rhubarb mixture.
3. Bake for 35-45 minutes or until the filling is bubbly and the topping is lightly browned. Let cool for 1/2 hour before serving. Serve with vanilla ice cream or whipped cream.
Serves 8.

Zions, what you can't see from the road!

























































We went on another monster hike on Saturday. About 9 miles with a 2,500 foot climb. The hike is called the "West Rim trail". You have to go up the same switch backs that take you to Angels landing but then you keep on going up and up and up. I felt good about being able to get out of bed this morning. Burned a few calories for sure. It was a beautiful day for a hike and for taking pictures. I will attach a few. Definitely a part of Zion you can't see from the road.

Our Flowering crab apple tree is beautiful this year in spite of the snow that covered it last week.

I hope you can see Mt. Baldy which is covered in snow on this 22nd of May. We tried to ride up the canyon to see how much water is coming down the creek but the road was closed due to a rock slide somewhere close to Ponderosa, a place they have never had rock slides before. I think it is just beginning! (the flood, I mean)

Mavs SWEEP



I told Steve about my prank and here is the proof. I have a "die hard"Laker fan co-worker and the morning after the Mavs completed their SWEEP of the Lakers, 4 games to 0, I had this little surprise waiting for him. Don't know how well you can see the pic, I took it with my phone, but I taped about a dozen brooms to his tool box signifying the SWEEP! Thank you Mavs! I hid behind some boxes and waited for him to discover my art work. When he walked by he did a little double take, looked around, then proceded to tear them all off and throw them in a pile on the floor. When I walked over with a big grin on my face he angrily said, "I knew it was you". I thought it was pretty funny. Deep down I think he did too. All in good fun!

Here are some random photos I just downloaded from my camera. . .


Jack lining up his cars. He likes to drive them on his blankie. Sometimes he crinkles it up so it has hills and valleys and hiding places that he calls his cars' homes. This keeps him out of trouble for a maximum of 15 minutes (you will know what I mean when you see the last picture, don't peek!).




All my kids were home from school on Good Friday so I made them a special breakfast. . . pancake bunnies! They were a big hit.

And finally, I title this one, "Who needs a tornado when you have a Jack?"


An hour before the guests arrived for a baby shower I hosted Saturday, Jack pulled our t.v. out of the stand and it shattered on the floor. To make matters worse Chris was out of town and I was left to clean up the devastation and my pregnant friend and I carried the beast (the t.v., I mean) out to the garbage. We've had this t.v. for our whole 15 years of marriage and it was working just fine, thank you very much. In typical Jack fashion, however, he walked away with just a few minor scratches.


By the way, we have been pretty quiet lately. Do we need to do another contest or something?
