Disney World

Maybe if you fix your mind on Honey Dukes at Harry Potter World you'll forget about the snow.

A few pics

Any guess as to what I'm doing here? Shooting off into space in only a swimsuit? Actually, I'm in the "Bod Pod." It's a capsule thing that BYU has for measuring body fat. A group of us from our boot camp went this morning to do it. I thought this picture was pretty funny. The good news is, my body fat was 21.5 percent.

The bad news, we had to drive down to BYU in this:
We've been dumped on the last few days. You can see where I tried to get Indy to sit on the picnic table to give you some perspective. He didn't stay long. He hightailed it back into the house with Megyn.

Bunny Blondies from Family Fun Magazine

I got a new software program for organizing my recipes. I'm now in the process of going through my file and trying to decide which ones are worthy of being typed up. I tried this one and decided it belonged in my permanent collection. It's good and I also feel like I'm eating something sort of healthy with all the carrots in it. I made it with whole wheat flour, too. If you don't like butterscotch chips, I'm pretty sure chocolate would work.

Prep Time: 10 minutes
Cook Time: 30-35 minutes
From Family Fun Magazine

8 medium carrots
2 1/2 cups flour
1/2 teaspoon baking soda
2 1/2 teaspoons cinnamon
1 teaspoon salt
1 1/2 sticks butter
1 cup brown sugar
1/3 cup sugar
2 eggs
2 teaspoons vanilla extract
1 cup butterscotch chips
1 cup chopped nuts optional

Yield: 24 bars
Preheat oven to 350 degress. Spray 9 x 13-inch pan with cooking spray. Grate carrots, should have 3 cups. Whisk together dry ingredients. Set aside. Beat butter, eggs, and both sugars until pale and fluffy. Add eggs and vanilla. Beat until well blended. Mix in carrots and the butterscotch chips. Stir in the flour mixture. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes. Do not overbake.

New Year's Day

This year I took off the tree decorations and replaced them with streamers and balloons for New Year's. I put little things inside the balloons for the kids.

Our Chickens Are Growing

Here are some pictures I took this weekend of our little chicks who aren't quite so little anymore. They are growing fast and they should start laying eggs in about two months.  They have been a lot of fun for us. Chris and I spent two days of our "Christmas Vacation" building a chicken run. This weekend we let them run loose in the yard. They seemed to really enjoy it. Kennedy has turned into a little chicken farmer.
