I'm going to be the first to post a recipe even though this contest doesn't begin until next week. I may even do another one, who knows. This is a recipe for a cookie that is a shortbread type of cookie. I would perhaps rate it as a 3.
CARMEL SANDWICH COOKIES
1 C butter (no substitutes_
2 egg yolks
2 1/2 C flour
1/4 tsp salt
2/3 C brown sugar, packed
1/2 tsp vanilla
1 1/3 C pecans, finely chopped
FILLING:
7 1/2 tsp butter
1 1/2 C confectioners' sugar
1/2 tsp vanilla
2-3 T whipping cream or evaporated milk (approx)
Cream butter & brown sugar. Beat in egg yolks and vanilla. Combine flour, salt and pecans. Gradually add to the creamed mixture. Shape into two (10-inch) rolls. Wrap in plastic wrap and refrigerate for 2 hours. Unwrap and slice each roll into 25 to 30 cookies (a little less than 1/4 inch each). Bake in a preheated 350 oven on ungreased cookie sheet for 10-13 minutes or until golden. Remove and cool.
FILLING:
Melt butter in medium-size saucepan. Stir until golden brown. Remove from heat and add sugar, vanilla and enough whipping cream to achieve spreading consistency. Spread on half of the cookies. Top with remaining half of cookies. Maes 25 to 30 sandwich-style cookies.
